This past weekend, I so desperately needed a freshly baked cookie, that I almost walked to our local bodega and bought pre-made cookie dough. I decided to give my Pinterest board a once-over and see if anything stood out as easy and/or fast.
I came across this recipe for possibly the easiest blondies ever. Averie’s recipe calls for: 1 stick of butter, 1 cup of brown sugar, 1 egg, 1 tablespoon vanilla extract, 1 cup of flour, and 1 cup of chocolate chips (how easy is that…I already have it memorized, so dangerous!) Just as I was about to make them, I noticed a ‘you might like’ recipe that was essentially the same concept, with the addition of some peanut butter. Luckily, we just bought some peanut butter (to coax Baxter to eat his medicine lol)…coincidence, or fate?
The ‘worth-it-ness’ of these blondies might be at the top of the list for my favorite easy dessert options. The batter takes less than 5 minutes to put together, and they only bake for 20 minutes. You’re about 30 minutes away from a gooey, peanut buttery, absolutely delicious treat. I added some vanilla ice cream to mine…I’m not telling you how to live your life, but you’d be wise to follow my lead.
Preheat the oven to 350 degrees.
Line an 8-by-8-inch baking pan with aluminum foil and spray with cooking spray.
Melt the butter in a large bowl and let cool.
Into the butter, add in the egg, peanut butter, brown sugar, and vanilla.
Whisk mixture until smooth.
Add in the flour and mix to combine.
Fold in 1 cup chocolate chips.
Pour batter into pan and sprinkle with a couple extra chocolate chips.
Bake for 20 to 24 minutes, or until done.
Allow bars to cool for 30 minutes before slicing.

- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 cup semi-sweet chocolate chips
