If you’re like me, when you have a specific craving (i.e. for a brownie), you want it now, and you want enough to satisfy your craving but not too much that you’re inundated with 100 leftovers.

This recipe is perfection for this scenario! It makes 4 good-sized brownies and legitimately takes 20-25 minutes from start to finish. These are also gluten-free! You can use regular all-purpose flour here with the same fudgy delicious results.

*My only advice is to line your pan with parchment – I completely forgot that step and since they are so fudgy I found they stuck to the pan a bit.*

Preheat your oven to 350 degrees. Line an 8 inch loaf pan with parchment and spray with cooking spray.

In a large glass bowl, melt your chocolate and butter together. It should take about 1 minute – you can stir every 20 seconds or so to help it melt down.

Whisk the chocolate mixture for a minute or two to cool it down.

Whisk in the egg, brown sugar, vanilla and salt. Whisk for 2-3 minutes so it is very well-mixed.

Sprinkle in the flour and whisk just a couple times to incorporate it.

Pour into your prepared 8 inch loaf pan.

Sprinkle with some extra chocolate chips, if you’re so inclined. In my opinion, a good brownie MUST have some chocolate chips or chunks!

Bake for about 15 minutes, or until the edges look darkened and the center has just set.

Let cool for at least 10 minutes, and enjoy!!

Makes: 4 brownies

Prep: 10 minutes, Cook: 15 minutes, Total: 25 minutes

  • 85g (1/2 cup) semi-sweet chocolate chips
  • 3 tablespoons unsalted butter
  • 1 egg
  • 110g (packed 1/2 cup) brown sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon kosher salt
  • 35g (3 tablespoons) gluten-free flour (I like Bobs Red Mill) OR all-purpose flour
  • Chocolate chips, for topping
