When this post is published, I will be en-route to enjoying 15 days of sunshine and lots of delicious food in Thailand and Myanmar. Andrew and I have a habit of taking vacations during the Super Bowl, so it’s usually, on at a very random time of day (in this case, 6:30am!!) and we’re typically drinking tropical drinks instead of our normal beer and wine.
We recently made these cocktails during a nasty cold weekend, just to fool ourselves into thinking we were on a sunny island somewhere (and as a reminder that we would be soon!). I’d advise you to follow suit, since these cocktails would be possibly the most delicious way to enjoy the super bowl. Before you know it, you’ll be on a beach in your mind.
Add the sugar, water and half the chopped mint leaves to a small saucepan over medium-high heat.
Bring this mixture to a boil and stir fairly consistently until the sugar is dissolved. This will take 2-3 minutes.
Pour the mixture over a mesh strainer and toss the mint leaves.
Let cool for 10 minutes or so.
Add the mint simple syrup to a blender with the remaining chopped mint leaves, rum, coconut water, coconut milk, lime juice and ice.
Blend until smooth, and pour into glasses.
Garnish with a lime wedge and mint leaf and drink up!

- 1/2 cup coconut water
- 1 can (14 oz) coconut milk
- 1/4 cup fresh squeezed lime juice (about 2 limes)
- 6 cups ice
