It’s not often something as simple as a zucchini bread really surprises me, but this one really knocked me off my feet!
Deb @ Smitten Kitchen is known for reliable and well-tested recipes, and this zucchini bread is no different. The key here is to bake this off the night before you want to serve and eat it.
Sure you can eat it right away and it’ll be good, but the next day this bread becomes something absolutely incredible. I added in semi-sweet and dark chocolate chips and will never, ever make another zucchini bread recipe.
Whatever you do – you must make this bread!!!
Preheat your oven to 350 degrees.
Spray an 8″ or 9″ loaf pan with cooking spray.
In a large bowl, mix together the zucchini, eggs, sugars, vanilla and salt until combined.
Add in the salt, cinnamon, baking soda and powder, and grated nutmeg.
Mix to distribute throughout the batter.
Add in the flour and mix until you can no longer see any white streaks of flour.
Add in your chocolate chips and stir them in gently.
Pour into the loaf pan and bake for about 50-60 minutes. Test with a toothpick and it will come out clean when it’s ready.
Let cool completely in the pan and then let it sit overnight before serving.
Slice and enjoy!
