In the very hottest days of summer, as much as I love chocolate desserts, I’m usually craving something a bit lighter. Also considering my wedding is about 9 weeks away (AHHHHH!!!!) I’ve been trying to make healthier desserts that don’t leave me feeling deprived.
These lemon poppyseed baked donuts are almost as good as the real thing (though, let’s be honest, no one would choose a baked donut over a fried one…c’mon!), and since they have greek yogurt in them I feel v. healthy eating at least two or three!
Preheat the oven to 375 degrees. Spray a donut pan with cooking spray and set aside.
Whisk your flour, baking powder, baking soda, and salt together in a bowl.
In another bowl, whisk butter, egg, sugar, milk, yogurt, vanilla, lemon juice and lemon zest.
Pour the wet ingredients into the dry and whisk until just combined.
Add the donut batter to a ziploc bag and snip the corner. Pipe the batter into the donut pan, filling a little over halfway.
Bake for 10 minutes, or until the edges are slightly browned. Cool for a couple minutes and then transfer to a wire rack.
For the glaze, whisk together all the ingredients.
Dip the donuts in the glaze and set them back on the wire rack. For even more deliciousness, let them sit for 10 minutes and then dip them again 😉
Eat immediately!
