Fish and Veggies in Parchment

Weeknight meals tend to become super repetitive in our house. Now that I’m not on the road as much, I’ve been able to experiment with some new healthy recipes.

One of the absolute easiest and healthiest ways to make a quick weeknight dinner involves “Fish En Papillote”, which is the fancy French term for fish in parchment.

Simply pick out a fish that looks good, add in some veggies, seasoning, olive oil, and a couple lemon slices, and you have a tasty and nutritious dinner in no time.

Preheat the oven to 400 degrees.

Take your parchment paper and fold each piece in half. Channel your elementary school Valentine’s Day days, and cut out a large heart shape.

Open up the heart, and place 1/4 of veggies across the parchment. I used carrots and some onions here.

Now, place a fish filet atop the veggies. On top of the fish, add another 1/4 of the veggies. I used the some more onions and bell pepper.

Season the fish and veggies with half of the salt, pepper, seasoning blend and minced garlic. Finish off the packet with 1/2 tablespoon olive oil and two lemon slices.

Now fold over the other side of your heart across the top of the fish and veggies. Seal the edges of the packet and make sure there are no gaps.

Follow the same process for the second fish filet.

Place into the oven for about 10 minutes or until the fish is cooked through. My haddock was about 3/4 inch thick and thoroughly cooked at the 10 minute mark. A thicker or meatier fish may take a couple additional minutes.

Remove from oven and serve piping hot. I made some baked sweet potatoes to go with the fish, but this would also be super tasty with some brown rice or quinoa.

Makes: 2 servings

Prep: 20 minutes, Cook: 10 minutes, Total: 30 minutes

  • 2 fish filets (I used haddock, but whatever is fresh or looks good will work)
  • 1 cup julienned vegetables (I used onion, bell pepper and carrot)
  • 1 garlic clove, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cracked black pepper
  • 1 teaspoon garlic seasoning blend (I used this – roc represent!)
  • 1 tablespoon olive oil
  • 4 lemon slices
