I’ve made many, many rice krispie treats over the years, and without fail every time they end up being kind of crunchy and frankly not that enjoyable.
I came across this trick which incorporates sweetened condensed milk and I was blown away with how absolutely delicious and soft these remained over time (let’s be honest they lasted 3 days, but still).
On top of that you guys know how much I love brown butter — so I had to include that here. I also toasted the rice cereal which takes these completely over the top. I hope you love these as much as I do!!
Spray a square baking pan (9×9) with cooking spray.
In a large pot, toast the rice cereal for 5-6 minutes over medium heat. Then place into a bowl.
Then, slowly melt the butter over medium heat. Let the butter cook until it foams and the milk solids start to slightly brown.
Once the butter is brown, pour in the sweetened condensed milk.
Stir in the salt and vanilla.
Add in 1/3 of the marshmallows and let them melt into the butter/condensed milk mixture. Turn off the heat and add in the second 1/3 of the marshmallows and let them mostly melt. Finally, add in the last 1/3 of the marshmallows.
Stir in the rice cereal until it’s all covered in marshmallow mix.
Pour into your prepped pan and press very slightly into the pan. Make sure you don’t press too firmly or else the final result will be hard instead of nice and soft.
Let the bars rest for at least an hour and then slice into squares. Enjoy!!
