Cheesy Sausage Cups

Since my beloved Packers aren’t going to the Super Bowl, and the Patriots (Andrew’s team) aren’t either…it looks like I’m going to have to put all of my energy and focus into planning an epic feast! Fortunately for me, spending the day prepping and eating food sounds way better than being stressed about the outcome of the game!!

Last year, I shared savory & sweet recipes that are great crowd-pleasers, so I wanted to do more of the same this year.

First up is a crunchy and cheesy bite-sized munchie using wonton wrappers as a base.

Preheat the oven to 350 degrees.

Spray a mini muffin tin and place a wonton wrapper in each cup.

Bake the wrappers for about 5 minutes, until the edges are brown.

Meanwhile, in a pan over medium heat, cook the green and white onion and pepper for a few minutes until softened slightly. Then add in the sausage and cook through.

Remove the mixture from the heat.

Add the cheese and ranch dressing, and mix to combine.

Spoon the mixture into the wontons and bake for another 6-8 minutes, until completely heated through.

Eat while hot.

Note: These are very easily frozen. Just follow the recipe through completion, wait to cool, and place into freezer safe bags. To reheat, simply place back into muffin tin and bake for about 10 minutes at 350.

Makes: 48 sausage cups

Prep: 10 minutes, Cook: 15 minutes, Total: 25 minutes

  • 48 wonton wrappers (about a 12 oz package)
  • 1 pound spicy italian sausage
  • 2 cups shredded cheese (I used a colby/monterey jack blend)
  • 1 bell pepper, diced
  • 1/2 white onion, diced
  • 6 scallions, sliced
  • 1/2 cup ranch dressing (I used yogurt ranch)

Meanwhile, in a pan over medium heat, cook the white onion and pepper for a few minutes until softened slightly. Then add in the sausage and cook through.

Remove the mixture from the heat.

In the same pan, add in the green onion, cheese and ranch dressing, and mix to combine.

Spoon the mixture into the wontons and bake for another 6-8 minutes, until completely heated through.

Eat while hot.
