On my last grocery trip, I was meandering in the cheese section, as one does, when all the sudden I stumbled upon burrata with black truffles. Of all things good in the world, burrata is really close to the top. Put some burrata on a piece of bread and it’s dinner.
Look at this glorious baby:
The package I found had two 4 oz burrata balls, so after eating the first one the instant I got home, I started thinking about possibilities for the second. I’ve posted time and time again about my love for pizza, so clearly it was an easy decision to go in that direction.
Preheat the oven to 425.
Place a pizza stone (or large baking sheet) into the oven
In a medium pan, sautée the mushrooms and onions in olive oil for 8-10 minutes.
While the mushrooms and onions cook, roll out the pizza dough.
Remove the pizza stone/baking sheet from the oven and place the dough onto it.
Add the mozzarella cheese onto the dough, along with the cooked mushrooms and onions.
Place into the oven and bake for 15 minutes.
Finally, use your hands to tear the ham and burrata into small pieces, add onto the pizza and bake for a final 2 minutes.
Drizzle with a tiny bit of truffle oil, less is more here!
Eat instantly.
Makes: 2-3 servings
Prep: 5 minutes, Cook: 25 minutes, Total: 30 minutes
- 1 tablespoon olive oil
- 8 oz shiitake mushrooms
- 1/2 white onion, diced
- 14 oz pizza dough (I used half of a Wegman’s whole wheat pre-made dough)
- 1 cup shredded mozzarella cheese
- 2 oz ham (I used deli ham, pancetta or prosciutto would be great here)
- 4 oz burrata, preferably with black truffle (I found this at Whole Foods)
- 1/2 tablespoon white truffle oil, for finishing
