Fudgy Oatmeal Bars

Have you ever made a version of ‘homemade’ fudge, that simply requires sweetened condensed milk, chocolate chips, butter and vanilla? You mix these things in a saucepan and then pour into a pan, let chill, and kablam – FUDGE!!

Well, let’s take this simple recipe and envelop it inside buttery and oat-y deliciousness. I don’t mind if I do.

Start by preheating the oven to 350 degrees.

In a stand mixer (you can mix this by hand, but the dough gets super thick, so it will also be an arm workout), mix together the brown sugar and butter.

Add in the eggs, one a time until fully combined.

Now add in the milk and vanilla. My batter actually looked curdled at this point, and they ended up fine, so if you have that issue – don’t fret!

Sift in the flour, salt, and baking soda, then mix in the oats.

Spread 2/3 of the oat mixture into a greased 9×13 baking dish.

In a saucepan over medium heat, mix together the sweetened condensed milk, chocolate chips, butter and vanilla.

Once everything is combined, pour over the oat bars.

Take the remaining oat mixture and dollop it over the top of the fudge layer. It won’t fully cover the fudge, don’t worry.

Bake the bars for 25 minutes.

Let come to almost room temperature before cutting.

Eat INSTANTLY with a huge glass of milk.

Makes: 36 bars

Prep: 10 minutes, Cook: 30 minutes, Total: 40 minutes

Oat Layer:

  • 16 tablespoons butter, softened
  • 2 cups dark brown sugar
  • 2 eggs
  • 1/3 cup milk
  • 2 teaspoons vanilla
  • 2 3/4 cups old fashioned oats
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Fudge Layer:

  • 14 oz sweetened condensed milk
  • 5 tablespoons butter
  • 1 teaspoon vanilla
  • 2 cups semi-sweet chocolate chips

Start by preheating the oven to 350 degrees.

Now add in the milk and vanilla.
