Brown Butter Snickerdoodle Blondies

You guys, I. just. can. not.

Since finding this blondie recipe a month ago, I’ve made them 3 times, and have loved them more each time. Gaby keeps them as a straightforward blondie, but I amped things up a bit with brown butter. The nuttiness and depth of flavor that this simple step adds is so incredible I can barely describe it.

There’s no denying I love blondies, but these just take things to a whole new level.

Preheat oven to 350 degrees.

Butter or spray an 8×8 baking dish.

Add the butter into a saucepan and set the heat to medium. Let the butter melt, and swirl the pan occasionally. The butter will foam a bit. Continue to cook until the color is a mid to deep amber (around 5-7 minutes). Pour the butter into a bowl and let cool.

In a stand mixer, add in the cooled browned butter, brown sugar, and granulated sugar. and mix for 1 minute until combined.

Add the vanilla and eggs and mix until fully incorporated.

Add in the flour, baking powder, cinnamon and baking soda and slowly mix until just combined.

Pour the batter into the prepared baking pan and sprinkle the cinnamon sugar on top and transfer it into the oven.

Bake for 40-45 minutes.

Once the blondies have baked, remove them from the oven and let cool for at least 2 hours before cutting.

Sprinkle the blondies with the cinnamon sugar/sanding sugar topping and serve.

Makes: 16 bars

Prep: 5 minutes, Cook: 50 minutes, Total: 55 minutes

For the bars:

  • 1 cup butter
  • 1 3/4 cups light brown sugar
  • 1/4 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 2 eggs
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking soda

To top the blondies:

  • 2 tablespoons white sugar
  • 1/2 teaspoon cinnamon

  • 2 tablespoons white sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons sanding sugar
